Cold weather calls for...soup

It's been cold here this past week. Like single digits and big fat 0 temperatures. I'm thankful I haven't had to be out of the house much. I have had to go out at night and round up the dog and cats to bring into the garage. They appreciated their few nights out of the cold. And our pigs have it the best it's 75 degrees in the barn they don't even know it's miserable outside.
When the weather turns cold it's a good time to put on a crockpot of soup or chili. This week it was potato soup. I'll share the recipe; it's a family favorite and originally was given to me by Big C's aunt.
 
Potato Soup
6-8 potatoes; peeled and cubed
1 medium onion chopped
1 stick of butter
1 8oz cream cheese
1 can cream of mushroom soup
1 can of cream of celery soup
1 1/2 cup milk
salt to taste
 
Cook potatoes with enough water to cover the potatoes and this water will not be drained. While the potatoes cook set out the butter and cream cheese to soften. Bring potatoes to boil and boil for 20 minutes. Once potatoes are cooked add onion and I normally saute the onions or microwave them so they aren't crunchy. Add the butter and cream cheese. Stir 'til melted. Then add the soups stir til smooth. Finally add the milk. Stir. Heat until warm 20-30 minutes or dump potatoes in the crockpot before adding other ingredients and set on low for a few hours. Stirring periodically. Enjoy!
 
This soup is really good leftover too. I've also learned to leave some big chunks of potatoes since all the stirring will mash the potatoes; this is if you want some chunks in your soup. We like to top ours with cheese and bacon bits and serve with grilled cheese.
